DALMORE 1995 MATUSALEM FINESSE DISTILLERY EXCLUSIVESingle malt.Dalmore have invested a lot to position themselves as a luxury brand, with their high-end expressions always resplendent in crystal decanters and lavish packaging. And you won’t ever hear them boasting about different cask finishes. Oh no, no, no; they prefer to “finesse” their spirit in a variety of exotic sounding wood. While this type of posturing isn’t exactly unique in the whisky industry, it does create a nagging doubt that the whole thing might just be a case of style over substance.Thankfully, Dalmore’s spirit (more often than not) lives up to the hype. They have a complicated distillation process that utilises mismatched stills to produce distillates with different characteristics. ARRAN MARSALA CASK FINISH 2018 EDITIONSingle malt.Still a relative youngster in whisky terms, Arran distillery began production in 1995. Thanks to a focus on sourcing quality casks, and its light, accessible spirit that ages well, Arran has proven extremely successful. So much so, that in 2017 they began construction of a second distillery on the other side of the island. SPRINGBANK 1991 12 YEAR OLD BOURBON WOODSingle malt.There are very few distilleries left in Scotland that have the capacity to carry out 100% of the whisky making process onsite, but Springbank can make that claim. CRAGGANMORE 1989 21 YEAR OLDSingle malt.Like fellow Speysiders Mortlach and Benrinnes, Cragganmore is a complex and weighty spirit highly prised by blenders. The secret of this “heft” is down to their long fermentation, unusually shaped stills and worm tub condensers. BUNNAHABHAIN 1987 30 YEAR OLD HUNTER LAING'S OLD & RARESingle malt.Purpose built in 1881 by William Baxter, Bunnahabhain distillery on the northeast coast of Islay featured housing for its workers, as well as its own pier for ease of transporting whisky and materials to and from the mainland. As with most distilleries, much of its life was spent producing blending stock, but in the late 1980s it began to appear as a single malt.Initially this single malt output was mostly sherry matured and so lightly peated as to be barely perceptible, placing Bunna’ firmly in the minority of Islay whiskies. Founded in 1886 by William Grant, and still family owned, Glenfiddich was one of the first distilleries to seriously market single malt whisky as a credible alternative to blends. This decision was prompted by a dispute with their grain supplier in 1963, leading to a scaling back in production of their Grant’s blend. However, only a year after it was decommissioned Brora was pressed back into service, this time making heavily peated whisky to pick up the slack for Johnnie Walker while Caol Ila distillery on Islay was being renovated. Eventually the distillery’s owners decided it was no longer required, and in 1983 the site was mothballed once more.But that wasn’t the end. BRUICHLADDICH 1990 27 YEAR OLD RARE CASK SERIES HB '90Single malt.Given Islay’s peaty reputation, the assumption might be that the islanders themselves favour big smoky whiskies. However, it’s actually Bruichladdich with its traditionally unpeated style that has earned the reputation as the local favourite. In today’s money that’s about £69,000, so still a bargain.The distillery’s microclimate ensures one of the lowest Angel’s Shares in Scotland, allowing Glenfarclas to release staggeringly old expressions that still boast eye watering ABVs, and their (almost) exclusive use of European oak Sherry Casks results in a whisky that’s resinous and rich in dried fruit notes.43% ABV / 75cl

ARDBEG ALLIGATOR COMMITTEE RESERVESingle malt.Located on the island’s rugged south coast, Ardbeg distillery represents the peatier end of the Islay spectrum. LAGAVULIN 12 YEAR OLD WHITE HORSE 1970SSingle malt.The Islay distillery of Lagavulin first gained notoriety in 1862 when it was acquired by the well-known blender, John Logan Mackie. He then passed the reins to his nephew Peter, who is credited with the creation of the highly regarded White Horse Blend. This blend was so successful that by 1924 the Mackie group changed their name to White Horse Distillers, before becoming part of the DCL group a few years later. Lagavulin single malt was still produced under the White Horse Distillers name until the late 1990s when it became part of the Diageo conglomerate.The most famous advocate of Lagavulin is probably fictional character, Ron Swanson, from hit US sit-com Parks & Recreation. CLYNELISH 1974 23 YEAR OLD RARE MALTSSingle malt.Built in the late 1960s, as a replacement for the distillery we now refer to as Brora, Clynelish has produced whisky for the Johnnie Walker range of blends ever since. Capable of producing nearly 5 million litres of spirit annually, it is one of Scotland’s larger malt distilleries. But despite this, it isn’t exactly a household name, with a relatively small percentage of its output appearing in single malt form.Its core range begins and ends with a 14-Year-Old, occasionally supplemented with a few limited releases and a sporadically bottled double matured Distillers Edition.
